Mozzarella has become the most sexy and exiting cheese on our plates our days.

The most common way to eat Mozzarella is with tomatoes in salad ( Italian name, Salad Caprese).

The Mozzarella is originally from the South of Italy, Campania to be precise, and the real Mozzarella is made with Buffle milk quite rare and not cow milk cheaper and abundant.

This great cheese started to be exported from Italy about 15 years ago and worldwide but to face the growing demand for the white bowl, they created a different type of Mozzarella made with cow milk, less tasty. Less creamy, less everything usually used for pizza but as well in some restaurants for the typical traditional dish of Salad Caprese and it is to avoid!.

So the real Mozzarella is the one made with Buffle milk and not Cow milk.

To recognize it, check the product and you should see Buffala ( in Italian) who means it is the one with Buffle milk and is more expensive than the fake one, usually from 2.90 pounds or more, instead of 50 or 70 p.

The way to appreciate it is to keep it  the way it is, like a big bowl in the middle of your plate, a little bit of olive oil and black pepper, in a pant fry in olive oil a few cherry tomatoes and basil for only 15 seconds when the oil is hot and place them around the Mozzarella in your plate and enjoy this delicious meal. You can fry it in beignet as well!

If you visit Paris, don’t forget to go to Chez Roberta, rue de Rennes near de Montparnasse tower, this traditional Italian restaurant is specialised in very fresh Mozzarella and is unique in Europe, it is better to go on Thursday or Friday when  they get the fresh delivery of real Mozzarella.
